Aquiares Red Honey

This is our 2nd year purchasing from Diego and his team at Aquiares and we are so proud! This year we chose a Red Honey processed experimental variety called H1 Centroamericano F1 Hyrid. This variety crosses Sarchimor T-5295 and a wild Rume Sudan variety using a tissue culture cloning process called embryogensis. This variety was distributed 10 years ago, but this is one of the very first productive harvests. The volcanic slopes of Turrialba and the lush forests, rivers and flora & fauna at Aquiares paired with their dedication to caring for the complex nutritional needs of this coffee have given Diego the success he's experienced - and we can absolutely taste the work in the cup! It tastes like raspberry and mango with a syrupy body.

Origin: Barranca Grande, Guatemala
Varietals: Bourbon, Typica, Caturra
Altitude: 1700-1900 MASL
Tasting Notes: Red Apple & Milk Chocolate, Buttery
Barrancas comes from San Marcos in Western Guatemala. Literally translated it means "ravines". Small and medium estates around the town of Barrancas Grande produce this coffee. Many of these farms are nestled in the ravines of the mountain side and are only accessible by dirt roads. Barrancas is a washed coffee that underwent a dry fermentation for 18-24 hours before being dried on cement patios for 5 days. It tastes like red fruit, chocolate, almond and citrus. These beautiful, balanced flavors can be attributed to the cool, dry climate of the 1700-1800 MASL that these farms sit at.

Origin: Hambela Wamena, Guji, Ethiopia
Varietals: JARC Selections, Ethiopian Landraces
Altitude: 1925-2110 MASL
Tasting Notes: Blackberry, Stone Fruit, Juicy
Benti Nenka comes to us from Hambela Wamena in the Guji region of Ethiopia. If you don't recognize Guji you may recognize the region of Sidamo. But, over the past decade much work has been done to differentiate Guji as its own separate growing region. Eyasu Worasa works with 600 contributing farmers to run the Guduba processing station. Eyasu uses traditional Ethiopian underwater fermentation to wash this coffee. It spends 36-48 hours underwater and then 10-14 days drying on raised beds. We are particularly interested in the JARC & Ethiopian Landraces varietals in this coffee. All of this hard work contributes flavors of blackberry and stone fruity with a juicy body.
JARC stands for the Jimma Agricultural Research Center. They select, cultivate and breed varietals in Ethiopia. JARC is run by the EBI, Ethiopian Biodiversity Institute. When you read Landraces you might liken it to heirloom varietals. And you wouldn't be totally wrong! Saying heirloom is a wide view of what landraces are. By being so specific about the varietals we've chosen to honor the research and intention that went into choosing these varietals for the land at Benti Nenka. We love that the EBI is specifically working to increase biodiversity in Ethiopia and are so happy to support their work!
